Can this be change to “services” or “courses”?
Is there a way to remove the blog box on the side of these pages, so that it is full width?
Can they be on-going or need a specific date?

You can use this section for any purpose,
To change the title of this section:
Go to Appearance » Theme Options » Sections » Section 1 » Section TitleAlso you can use any specific date.
To remove the blog box on the sidebar and display classes details page in full width
Go to Appearance -> Theme Options -> Basic Settings -> Blog Single Layout -> Select Blog Single Full Width
